Study on Kinetic and Separation Process of Glucosamine Production in Water-miscible Solvent

Abstract

Glucosamine (GlcN) has traditionally been produced by hydrolysis of shellfish exoskeleton and microbial fermentation. However, production by hydrolysis has limitations including the availability of raw material, shellfish allergy, and environmental contamination. Meanwhile, production by microorganism is limited due to long fermentation time and separation process. In regards to these limitations, in this study, production of GlcN was conducted by non-enzymatic chemical reaction between carbon source (glucose or fructose) and ammonium source (mixture of ammonium acetate and ammonium chloride) in the presence of methanol containing acetate acid as buffer system. The result showed that production with fructose as carbon source can form solid GlcN with yield of GlcN was 544.79 mg/g carbon. The yield was much higher than production by fermentation (220 mg/g carbon). However, further study on purification process of GlcN is required.
